Give Us Our Daily Bread

It’s a trying time in our nation as we face this pandemic. Here on the Gulf Coast, we’re struggling to find bread, toilet paper, and other staple household products right now. Just like everyone else, our kids are all out of school while we try to work or work from home, and sometimes they just need a good ol’ PBJ to get them through the day.

I’ve got a fantastic bread recipe for you today that makes terrific sandwiches and toast! You’ll either need a bowl that has its own lid, or just cover your bowl with clingfilm or a tea towel. The most important thing to remember when making bread is that the flour has stringy, sticky, gluten in it. We need to develop those strings to get a good bread that won’t fall apart. So when you knead your dough, do so until it is bouncy and stretchy.

Easy Bread-

Makes 2 loaves

1 3⁄4 cups warm water

3 ¼ tsp dry yeast

3 tablespoons sugar

2 1/2 teaspoons salt

6 cups flour

3 TBS butter1 egg

Mix the yeast with warm water in a bowl. Add sugar, butter, eggs, salt and 3 cups flour. Mix well with electric mixer. Add the last 3 cups of flour and stir by hand. This will be VERY sticky! If you’re using a bowl with a lid, put the lid on bowl and let rise until it pops off. Otherwise, cover with clingfilm or a tea towel and keep an eye on it. When it’s doubled, it’s done. Take it out and knead it firmly for at least 5 minutes.  Divide into 2 loaves and put into greased pans. Let it sit 40 minutes covered with a moist towel. Bake at 350 degrees for 50 minutes.
